Festive breakfasts – the perfect way to use up leftovers

While a Christmas day roast with all the trimmings is the main food focus of the festive season, the Waitrose Food Innovation Team has plenty of inspiration and ideas to ensure your Christmas breakfasts are special too. Plus, they’re a brilliant way to use up any leftovers after the main event.

According to the Waitrose Food and Drink Report 2021-22, 75% of people have committed to reducing their household food waste this year, and 56% of people say it’s something they want to continue to do in the future.

Martyn Lee’s Leftover Christmas Turkey Hash

Martyn Lee, Waitrose Executive Chef, says:  ‘A turkey hash is a brilliant way to use up both leftover turkey and roasties. Potatoes are in the top ten foods that people throw away in the UK, so it’s great to find delicious ways to use them up, and this dish is no exception. It’s the perfect breakfast to serve on Boxing Day or the day after.’

To make, simply combine cold pieces of shredded turkey, roast potatoes and cubes of sourdough with onions cooked in butter and some fresh sage. Season with salt and pepper, and fry in a dry pan until boiling hot. Top with a poached egg and some Hollandaise sauce, for a truly decadent brunch.’

If you made your own Christmas cake or pudding this year, you may have some dried fruit and mixed peel left over. Instead of letting them sit in the kitchen cupboard, use them up by making a delicious breakfast granola which will taste of Christmas. Combine dried fruits and mixed peel with oats, honey, maple syrup, flaked almonds, roasted pecans and flavour with ground cinnamon and ginger, before baking in the oven until golden. Let it cool and store in an airtight jar.  This granola works brilliantly with Greek yoghurt and a fruit curd of your choice – mandarin or lemon work particularly well.​
